Lunch Time 

 
A Gambian dish of the day.
 
One of these will be freshly cooked each day. Please let us know in the morning if you would like to stay for lunch.
 
 
Chicken Yassa with rice (chicken in a tangy lemon and vegetable sauce)
Fish Benachin (locally caught fish on a bed of richly flavoured rice and vegetables)
Chicken or Prawn Domoda with rice (a spicy, thick peanut sauce)
Bahal (smoked fish mixed with rice…similar to our kedgeree)
Fish stew with rice or couscous (mixed fish in a rich, hot spiced vegetable sauce)
 
We can also offer omelettes, locally baked meat pies or a choice of sandwiches.
 
 
 
 
 
The evening meal is a set 3-course menu using locally sourced fresh products.

         Hummus with tomato, olive and rocket salad
·        Fish in garlic sauce, green beans, white rice
·        Orange, papaya and watermelon fruit salad with ice-cream
 
·        Garlic bread with grilled tomato and pesto topping

·        Banana split with homemade dark chocolate sauce
 
·        Egg and potato mayonnaise on mixed leaves
·        Spicy meatballs in a rich tomato sauce on spaghetti
·        Honeydew melon and pineapple salad
 
 
·        Orange, date and carrot salad with toasted sunflower seeds
·        Sticky honey and ginger chicken with lemon rice and  fried courgettes
·        Pineapple fritters and ice cream
 
·        Tomato and Mozzarella salad with sesame bread
·        Arabic stuffed leaves with spicy lentils and seasonal vegetables
·        Fresh fruit salad and ice-cream
 
·        Tuna and cream cheese dip with carrot sticks and garlic toasts
·        Fish goujons with yogurt dip, garlic mayonnaise, crusty bread and mixed salad
·        Banana and mango mousse with almond fingers
 
·        Tuna Bites on leaves
·        Crunchy topped Cheese Pasta bake with bacon & peppers,  fried courgettes and tomatoes
·        Grilled pineapple in cinnamon sugar with ice-cream
 
·        Warm pumpkin and feta salad with toasted sunflower seeds
·        Tiger Prawns in their shells, noodles, pineapple and chilli salsa mixed salad, crusty bread
·        Hot Papaya kebabs in a sticky syrup with  vanilla yogurt
 
·        Falafel with yogurt dip and tahini sauce
